Peking Duck Salad

Ingredients:

1. Duck Breast: 180 g
2. Cucumber: 200 g
3. Red Onion: 50 g
4. Red Chilli: 20 g
5. Spring Onion: 20 g

Prepare the Duck Breast: 

1. Lightly score the skin of the duck breast.
2. Season generously with salt and freshly ground pepper.
3. Place skin-side down in a cold pan, then gradually heat over medium heat.
4. Render the fat and crisp the skin for approximately 6-8 minutes.
5. Flip and cook the flesh side for another 3-4 minutes, or until desired doneness (e.g., medium-rare).
6. Rest the duck for 5 minutes before thinly slicing.

Prepare the Vegetables:

1. Cucumber: Thinly slice.
2. Red Onion: Thinly slice and soak in ice water for 5-10 minutes to reduce sharpness; drain thoroughly.
3. Red Chilli: Finely slice, removing seeds if desired.
4. Spring Onion: Chop.

Make the Dressing:

For a light, Asian-inspired dressing, combine:

1. 1 tbsp Soy Sauce
2. 1 tsp Sesame Oil
3. 1 tsp Tamarind Juice. Whisk ingredients together until well combined.

Assemble the Salad:

1. In a large mixing bowl, gently toss together the sliced cucumber, red onion, spring onion, and red chilli.
2. Artfully arrange the thinly sliced duck breast over the salad base.
3. Drizzle generously with the prepared sesame oil dressing.
4. Finish with a sprinkle of toasted sesame seeds for added crunch and aroma.
