- 500g boneless Wagyu beef shank
- 50g massaman curry paste
- 50g coconut palm sugar
- 50g roasted coconut
- 200ml coconut milk
- 5 star anise
- 3 large cinnamon sticks
- 5 cardamom pods
- 5 bay leafs
- Fish sauce - to taste
- 30g peanuts
- 300g potatoes
- 1 large onion
Method:
- Remove any bone from the beef shank and sear on all sides in a hot pot with vegetable oil.
- Remove the shank after it is coloured on all sides. In the same pot add your massaman curry paste, cooking it off in the oil for 3 minutes. This is an important step to prevent the curry from tasting grainy.
- Add your roasted coconut and coconut milk and bring to the boil. Once boiling,
- reduce the heat to simmer and add the remaining ingredients, including the seared beef but NOT the potatoes.
- With lid off, and on a low to medium heat, allow curry to cook for 3 hours stirring every
- 20-30 minutes. In the last hour of cooking add your roughly chopped potatoes and allow to cook until soft.
- After 3 hours, the beef should be tender and almost falling apart - this means it is ready. Taste and adjust seasoning with fish sauce if you feel it’s required. Serve with steamed rice or a roti.

Chef Feen (Mr. Wiset Sompetch) is a highly skilled Thai chef and the Head Chef at Eden By The Lake, an international fine dining restaurant located on Boat Avenue. Chef Feen has been with the restaurant since its establishment in 2021. His culinary journey began in 2004 at Phuket Fantassea, and he has since worked at several top restaurants and hotels, including Pullman Phuket Arcadia Naithon Beach as a Chef de Partie and Ayara Villas Hotel as a Sous Chef. He returned to Phuket during the COVID-19 pandemic and joined Eden Restaurant.
Chef Feen’s extensive experience and expertise in international cuisine, combined with his commitment to using fresh ingredients and precise cooking techniques, are shared by both him and the kitchen team. They carefully select ingredients and meticulously prepare every dish to ensure that customers are impressed and leave with a smile every time they dine at Eden.
