- 500g boneless Wagyu beef shank
- 50g massaman curry paste
- 50g coconut palm sugar
- 50g roasted coconut
- 200ml coconut milk
- 5 star anise
- 3 large cinnamon sticks
- 5 cardamom pods
- 5 bay leafs
- Fish sauce - to taste
- 30g peanuts
- 300g potatoes
- 1 large onion
Method:
- Remove any bone from the beef shank and sear on all sides in a hot pot with vegetable oil.
- Remove the shank after it is coloured on all sides. In the same pot add your massaman curry paste, cooking it off in the oil for 3 minutes. This is an important step to prevent the curry from tasting grainy.
- Add your roasted coconut and coconut milk and bring to the boil. Once boiling,
- reduce the heat to simmer and add the remaining ingredients, including the seared beef but NOT the potatoes.
- With lid off, and on a low to medium heat, allow curry to cook for 3 hours stirring every
- 20-30 minutes. In the last hour of cooking add your roughly chopped potatoes and allow to cook until soft.
- After 3 hours, the beef should be tender and almost falling apart - this means it is ready. Taste and adjust seasoning with fish sauce if you feel it’s required. Serve with steamed rice or a roti.

Chef Mard, also known as Chef Suchin Longkunan, is a highly skilled Thai chef and the executive chef at Eden Grill Phuket, an international fine dining restaurant located on Boat Avenue. Chef Mard has been an integral part of the restaurant since its establishment in 2021. He started his culinary journey in 2006 at Pimalai Resort in Krabi and then worked at several top restaurants and hotels, including Arinara Beach Resort and Centara Grand in Phuket. He also worked in Bangkok as a chef de partie at Centara Watergate Pavillion.
In 2013, Chef Mard returned to Phuket and joined Iniala Beach House, a prestigious 7-star hotel holding 3 Michelin stars, as a chef. He then moved on to Iniala Kitchen and Bar, where he continued to impress guests with his exquisite Thai cuisine. After its closure, he spent some years running his own business before joining Eden Grill as the executive chef.
