Ingredients for 4 portions:
Technology: Whisk the egg yolk with passion fruit juice, lime juice and 50g of sugar on a bain-marie until the sugar dissolves and the mixture becomes smooth foam. Add cold butter, a little at a time, and keep whisking until the butter dissolves. Move your curd from the bain-marie, allow it to cool a bit then add fresh lime zest.
For the soft meringue whisk cold egg whites on medium speed until they foam and then add 70g of sugar and mix until soft peaks. Immediately transfer to a piping bag and keep in the chiller.
Plating: Put curd into a deep plate, add passion fruit pulp and squeeze the meringue on top; slightly burn with a gas burner.
