Oyster & S.C.O.B.Y: Freshly shucked oysters paired with SCOBY – a jelly-like texture from berry kombucha and rose sugar. Finished with fermented plum vinaigrette. Refreshing and innovative.

Tartare & Whey: Locally sourced buffalo meat tenderised in koji and papaya seeds. Served with a relish of toasted grains, sake kasu oil, and buffalo milk emulsion.

Fish and chips: A sustainable twist on a classic. We turn surplus bread and fried potatoes into a crunchy cracker, topped with tucupi, grilled grouper, and stewed greens cooked in umami-rich lacto koji water.
