Trilogy restaurant serves modern-style Thai food incorporating Southeast Asian flavours and spices, infusing the sweet-spicy-sour cooking with fresh and flavourful ingredients for an interesting twist to Thai cuisine’. Open daily, the restaurant offers both indoor seating and an al fresco terrace with calming poolside views.
The newly revamped menu at Trilogy Restaurant consists of 69 mouthwatering items and classic favourites such as Minestrone Soup, Steak Sandwich and Macaroni Cheese with Mushroom. Upon the very chatty Chef Alfie’s recommendation, we choose a sampling of local favourites.
Presentation is everything, and our Thai food specialities are served on a large platter of individual dishes, nestled amongst local produce and fruit carvings. The presentation is quite charming and we tuck into Phad Kra Prao Moo, Kaeng Keaw Wan Gai, Kaeng Poo and stir-fried mixed vegetables with oyster sauce. Accompanied by steaming plates of Jasmine rice, the food is authentic and full of rich Thai flavours.
From the first bite, it is obvious that Chef Alfie and his team have perfected their craft. The flavours are a tantalising mix of sweet and spicy with bold herb and spices. The Kaeng Poo is rich and creamy. The crab is obviously fresh with no overbearing seafood taste and the dish mixes perfectly with the soft vermicelli noodles.
The Phad Kra Prao Moo is next level. The pork is melt-in-your-mouth tender and the amount of spice is just right. This is one of my all-time favourite Thai dishes, and Trilogy Restaurant’s perfection of this street food classic is enough to bring me back to dine here again and again.
With full bellies, we are offered a dessert that is not on the menu. However, this is no secret. Its popularity precedes itself. Served in martini glasses, we are given an adult twist on the favourite Southeast Asian dessert, Cendol.
Cendol is an iced dessert that features coconut milk, palm sugar, shaved ice, pandan leaves, red beans and worm-like strands of green rice flour jelly. The team at Trilogy Restaurant serves their Cendol with a shot of Kahlua and a touch of Malibu Rum. The dessert is sweet, it is sticky and a creative cocktail approach to a loved favourite.
In addition to its robust menu offerings, Trilogy Restaurant also serves breakfast. The show kitchen is a nice touch that allows diners the chance to witness the culinary handiwork that goes on behind the scenes.
