Phuket Lobster Thermidor

Phuket Lobster Thermidor is a rich and flavoursome dish featuring fresh Phuket lobster with garlic, cognac and a creamy Thermidor sauce. This elegant seafood dish combines delicate lobster meat with aromatic herbs and a smooth, buttery sauce for a truly indulgent experience.

Ingredients

1. 5 g shallots
2. 5 g chopped garlic
3. ½ tbsp tarragon leaves
4. 1 tbsp cognac
5. ½ cup fish stock
6. 1 tbsp mustard powder
7. ½ cup hollandaise sauce
8. 1 Phuket lobster
9. 2 tbsp butter
10. 10 g mushrooms
11. 50 ml whipping cream

Chef Nattanun ‘Pui’ Yatajareanrod says this is one of the favourite dishes at Nora Beach Club. His secret to making this dish so popular is using live Phuket lobster and selecting only the finest quality ingredients.

Method

1. Cut the lobster in half and remove the meat from the head. Set aside and cut the meat into bite-sized pieces.
2. Melt butter in a pan and sauté the shallots and garlic. Add the fish stock, cognac, mushrooms, tarragon leaves, mustard powder and whipping cream. Cook for about three minutes. Finally add the hollandaise sauce and cook gently until the mixture becomes golden and creamy.
3. Combine the lobster meat with the sauce, then place it back into the lobster shell and serve.

Chef Pui is a Phuket native with more than 30 years of culinary experience. He previously worked at Phuket Yacht Club in Nai Harn for over six years and later at Twinpalms Phuket, before joining Nora Beach Club.
