Andaman grilled seabass served with Phuket pak miang Roll with rice, herbs, green sauce, and mint crumbles
· 350g Seabass fillet
· 20g Breadcrumbs
· 50g Pak Miang (Phuket local vegetable)
· 60g Riceberry
· 30g Green peas
· 10g Cream
· 2g Garlic
· 2g Salt
· 2g Pepper
· 5g Olives
1. Begin by cleaning the seabass and slicing it to your preferred size. Proceed to marinate the seabass with spices and let it sit for 20 minutes.
2. In a pan, stir-fry the pak miang, season it to taste and carefully roll it together with thinly sliced eggs.
3. Boil the green peas until they are cooked, and then mix them with a creamy sauce.
4. Take the marinated seabass and coat it evenly with breadcrumbs by gently kneading it.
5. Grill the seabass on a charcoal stove to enhance its aroma, cooking it until it is almost done. Transfer it to the oven and bake for approximately 15 minutes.
6. Stir-fry Riceberry rice with garlic to accompany the dish.
7. Arrange all the prepared components on a serving dish and serve.

Chef Fah embarked on her culinary journey in 2006 as a Commis de Cuisine at a prestigious 5-star hotel in Koh Samui. Since then, she has honed her skills by working in various 4 and 5-star hotels and resorts in Huahin and Phuket. With an impressive 17 years of experience in fine dining establishments and even a 2-star Michelin restaurant, she has become a true expert in her field. Chef Fah's passion lies in creating and serving a diverse range of Thai and international cuisines.
In her current role at MINT Bar and Restaurant, Chef Fah takes charge of crafting and executing modern Thai cuisine with a progressive presentation. She places a strong emphasis on utilising the finest sustainable ingredients sourced from local farmers and fishermen. One of her exceptional recommendations is the Karon Green Fish, a special menu of the month that showcases the flavours and aesthetics of Phuket's local ingredients. Its taste and presentation are truly extraordinary. Additionally, Chef Fah has curated other unique dishes like Chicken Roulade, Lamb Rendang in MINT style and Surf and Turf, each presented with a special touch that sets them apart from anything you may have encountered before.
Chef Fah's culinary expertise has garnered recognition throughout her career. She has earned a Bronze Medal for her participation in the Andaman Culinary Challenge Free Style and Mystery Box Culinary Challenge Free Style competitions.
