• 120g spaghetti (any long bronze cut, slow dried pasta)
• 20-40g dry chili
• 10g finely chopped garlic
• 50ml olive oil
• 5g fresh flat leaf parsley, chopped
• ¼ fresh lemon – remove seeds
• 100g rock lobster meat
• 1 piece rock lobster – split
• white wine for cooking
Method
• Cook pasta, as per instructions and set aside
• Dry roast (in a pan/wok) dry chili until slightly coloured, allow to cool & chop roughly
• Grill split lobster & set aside
• Gently sautée the garlic with the chili & lobster meat until almost cooked, then finish with a splash of white wine & allow to reduce by half
• Add spaghetti & mix well with parsley, juice from lemon and place into a bowl
• Top with grilled lobster
