That Watermark is well known for its Friday night Happy Hours is not a secret among island residents. Not only is this marina-side venue a favourite gathering place that continues to grow in popularity, it is also a favoured dining choice. With an al fresco and spacious deck setting just steps away from luxury yachts in the Phuket Boat Lagoon, Watermark provides an idyllic atmosphere in which to enjoy exotic cocktails – the Passion Fruit Margherita is highly recommended – and a superb array of contemporary Thai and international dishes from the All Day Menu.

A sampling of various dishes makes it possible to enjoy some of the delights featured on a menu. An interactive approach to dining – mixing and matching your favourite dishes as appetizers or main courses – allows a tasting of the fine food that Chef Scott Flaxman and his team have superbly prepared.

The appetizers of Blue Crab Cakes with pomelo, apple and cucumber salad bound in a red curry dressing and the Beef and Indian Curry Leaf Bags with condiments of mango salsa, balsamic chutney and eggplant pickle were a splendid medley. The candied lemongrass on top of the dressing was not just an ordinary garnish but an intriguing display of imagination originality.

On the fare for the main course was a meat and pasta combination. The Beef Rump Steak with morel jus served with potato wedges was succulent and cooked to medium rare perfection. The Spinach Linguini with lobster was a refreshing variation on a traditional favourite.

Watermark categorises their wines under fun headings such as “Big and Bold”, “Fresh and Delightful” and “Easy Drinking”. The recommended Beverford Cabernet Sauvignon 2003 from Australia proved to be a true complement to the meal.

Special mention goes to the desserts! The Lime Cheese Cake with candied zest with a passion fruit coulis and margherita jelly wedges and the Italian Almond Chocolate Cake with vanilla – basil ice cream were decadent treats to top off the evening.

With a unique location, an exotic drink menu, and a diverse cuisine that features a superb range of international dishes and flavour combinations, Watermark is a preferred choice for drinks and for dining. There is something for everyone to enjoy – that is if you haven’t already.
