“Wines by the Glass” is the ideal way to sample some of the wines from the best producers of the world that complement the exquisite dishes prepared. The Giesen, Sauvignon Blanc, 2004 from New Zealand is a dry and refreshing white wine that was a perfect recommendation to the appetizers of Prawn Timbale – prawns, avocado and tomato confit – and to the Sea Scallop and Duck, a dish of sautéed sea scallops and sliced breast of duck with bean sprouts and soya shallot dressing. An Australian red, The Queen Adelaide, Pinot Noir, 2004 was a good choice for both the seafood and meat entrées. The recommended dishes of Rock Lobster Triology with three styles of rock lobster topped with green curry, Armagnac and Thermidor sauce and Roasted Australian rack of lamb encrusted with Oriental green herbs served with thyme sauce offered splendid taste and texture combinations.
The evening was topped off with decadent sweets of a creamy Tiramisu and Warm Chocolate Cake with pistachio ice cream and a Muscadel.
