“Many of our guests come here for almost every meal of their stay as well as for our Sunday brunch. A rotating weekly menu, which includes daily specials, all with a special Swedish flavour, also entices local expats to return again and again”, says Jan Olsson, General Manager of Scandinavian Lagoon Resort.

Akvavit sill & nubbe, words that pleasantly roll on the tongue to aquavit, herring & snaps, lends itself to a delightful occasion of superb food and merriment. The restaurant, with its relaxing and open-aired atmosphere and a magnificent poolside and residential setting are the scene for the newest Scandinavian restaurant on Phuket.

Cocktails are an element which set the mood of an evening out – a notion that became more enhanced with a lively conversation on dining ideas with our congenial hosts Jan and Executive Chef Marcus Stoltz. The freshest ingredients alongside creativity and passion for the art and science of cooking are used to create dishes that not only are pleasing to the eye but are wonderful to the taste and satisfying to those with the biggest of appetites.

The Mango Gazpacho served with smoked salmon and garlic crostini was our first attestment to the chef’s culinary skills. A traditional Spanish gazpacho puréed with Thai mango and served with Norwegian salmon and an Italian style breadstick was a unique combination of international ingredients and sensational in taste.

The main course also proved to be a delight to the senses. Varying tastes and textures were to be explored in the Fried Fillet of Lamb marinated in rosemary, garlic and lemon served with potato and parmesan duchesses, gorgonzola mousse and mushroom and cognac reduction. The gorgonzola cheese was a luscious choice to the perfectly cooked, medium rare lamb while the combination of potato and mushrooms were a welcoming accompaniment to the meat.

White and red wines complemented the stupendous meal while a premium Swedish cider followed. The Chilean Resavado Chardonnay was a refreshing choice to the appetizer; the Chilean Resarvado Cabernet Sauvignon proved to be the perfect choice to the lamb. The Kopparberg Pear Cider, a refreshing beverage for almost any time of day, provided the ideal cap to the evening.
