There are only a certain few select restaurants that can offer an evening of enjoyment with unsurpassed sophistication. A superb cuisine prepared by an award-winning chef, along with warm hospitality in a luxurious but relaxing ambiance, set the stage for an ideal and memorable evening out. With a seating of al fresco and outdoor dining by the sea, and the soft sounds of the musicians, the setting for the discerning diner or those seeking a romantic interlude, is complete.

Sala Bua at the boutique hotel, Impiana Phuket Cabana, is such a venue. A stunning view of the Andaman Sea, white tablecloths on the sand and inside define the elegance of this beachfront place to dine. An array of culinary delights prepared by Executive Chef Ronnie Macuja who steered Sala Bua into winning a coveted ‘Best Restaurant’ award granted by Thailand Tatler from 2002 to 2009, lay testimony to the chef’s passion with his work.

The unique evening began with the Marinated Lamb Chops with tomato-mint gremolata, young spinach and the White Lettuce Salad with bacon, croutons, parmesan shavings and Caesar dressing. The flavour of the lamb chops was well-enhanced with the subtly spiced tomato-based sauce. This was followed by a Froth of Mushroom and Scallop “Cappuccino” and a Schnapps of Raspberry – jubilant tastes, in an Espresso cup and a shot glass!

The entrées of the Open Lasagna of Rock Lobster with white truffle mash potato and new season garlic cream and Hoisin Roasted Duck Breast with maple-glazed pears, charred asparagus and cherry-grappa sauce further injected the feeling of heavenly bliss into the experience. These dishes were inspiring in their concepts, presentations, and savoury tastes.

Fine wines and delectable desserts are ‘must’ accompaniments to a refined dining occasion. The Australian red, The Little Penguin, proved to be a perfect match to the evening’s dishes. The Carmelized Mango Cream, Kaffir Lime Curd and Mango Sorbet was an array of sweet and refreshing delights to the meal.
